75% whole bunch with the remainder whole berry. Minimal punch downs, and is mostly intracellular in fermentation. We're aiming for light weight, fine chalky tannin with a pretty fruit concentration.
A few tweaks on last year's process, has provided more structure, perfumed nose, and fruit concentration whilst still staying very light, and very fine.
Aiming for prettiness, and pulling forward our pick to see what these old vines are capable of, there was fantastic acid retention and gorgeous fruit profile.
"Darker fruit spectrum here, black cherry, some plummy fruit characters, tobacco, clove, dark chocolate. It’s washy and soft in the palate, shows off lots of spice, has a richness to its character, lots of flavour let’s say, but still manages to hit a medium weight feel"
