With a vision of change for some of the big bold Shiraz currently frequenting the BV, this Syrah is picked early to maintain natural acidity. Fruit is ripened to taste, and gently hand-picked as the sunrises. 50% whole bunch with the remainder is destemmed on top. The fruit begins it's life under a CO2 cover until it begins to naturally ferment. The cover is then removed, pigeaged initially and then hand plunged twice daily to keep the cap moist. Basket-pressed, transferred to neutral oak for 8 months and bottled.
The resulting wine shows elegant, floral, violet and perfumed aromatics. Bright berry fruits and supple spice.
