Cabernet Sauvignon, in our opinion the BV's best kept secret. Fruit is ripened to taste, and gently hand-picked. 100% hand destemmed whole berry fermentation. The fruit begins it's life under a CO2 cover until it begins to naturally ferment. The cover is then removed, pigeaged initially and then hand plunged twice daily to keep the cap moist. Basket-pressed, transferred to neutral oak for 8 months and bottled. This is then blended to balance with our 2020 Syrah.
The resulting wine shows very supply varietal herbaceous characteristics, beautifully balanced tannin with bright cherry like red fruits finished with layers of spice.
